The old wood foot grinder my Grandfather had, used a stone with as I recall a square hole in the center and the axle was square where it went through. It rotated in two wood post and had a handle on the open side that drove it from a foot pedal that was basicly a three inch wide board with a metal rod conecting the wheel and pedal.
